There’s a whole buttertub of luscious lore behind such classics as eclairs, Croquembouche, and Paris Brest. And you’ll marvel over the miracle of mousse cakes and who was the first to modernize these to-die-for treasures. Reference material includes a sweet sampling of the chef’s own French pastry.
